Tori Ichi is located in the back alley of Raccoon Alley 1-chome, Sapporo. Tori Ichi is a hideaway that offers a one-course menu** that concentrates on the artisanal skills of the chef, who changes the heat of each part of the meat to exquisite perfection.

Jidori chicken directly from the production area has different melting point of fat and elasticity of meat depending on the part of the chicken. For a strong texture, use high heat to give it an aromatic flavor, and for a delicate part, use a low temperature to give it a moist tenderness. Craftsmen interact with the charcoal fire and grill the meat at the "moment" when it shines brightest. This meticulous calculation produces juices and deep flavor that overflows with each bite.

We are also proud of our carefully selected tableware and presentation. The beautiful presentation of each dish is an art form that is truly a feast for the eyes and taste buds. We have carefully selected the sake and wine to be enjoyed in between courses, taking into consideration their compatibility with the dishes and enhancing the lingering taste of each skewer.
