The "Amakusa Daio," Kumamoto Prefecture's local chicken with a reputation for its juicy and chewy meat, is grilled to perfection using high-heat binchotan charcoal to lock in the flavor all at once, and the chefs' attention to detail shines through in this course.

By changing the heat to the perfect degree for each part of the dish, the texture is crispy on the outside and juicy on the inside.
